If you are Canadian and you are traveling abroad, what is the best thing you could ever find? TIM HORTONS! While in Dublin, I found myself a Timmy’s just outside of Trinity College. It is inside a SPAR store, and it is just a kiosk thing, but still. I got me a Timmy fix!
I’m in love with designer Kate Spade. To me, she can do no wrong. So when I was playing around on Amazon.ca and found these gems, I knew I had to have them!
To add to the awesome find, my friend Jessica actually added to my Ryan Gosling love with this “Hey Girl” journal. I nearly died laughing when she gave it to me as I think it is all sorts of awesomeness. For those unfamiliar with “Hey Girl”, it was an internet meme that was created where there were pictures of Ryan Gosling being super supportive of feminists and loving everything about women, from their shopping and pinterest addictions to their love affair with sewing and knitting. Genius, I say.

What happens when you give me 7 days to plan my wedding while I’m in Ireland? A overly jam-packed ’vacation’ filled with wedding stuff galore. As soon as we were off the plane, we were on the go to the florist in Peter’s hometown of Balbriggan. This man, John, is a floral GENIUS!
After several conversations over the phone with myself and the mommy-in-law, he had a prototype ready for the mommy-in-law’s and my visit. Just imagine the lilies replaced with hydrangeas, and that is my vision.
Following a wonderful floral appointment and grabbing a bit to eat, I was finally able to get some sleep as Tuesday was gearing up to be another wedding planning filled day with cake tasting and invite sending planned.
Tuesday was all about the cake! Since my cake is obviously not ready, I thought I would share what I’m planning on it to look like
I can’t wait to see the final product!
I love everything about this, and our cake makers, Cakes & Cards, are truly incredible! During our cake tasting, my mother-in-law couldn’t help but eat all the icing for the cupcakes as it was just too delicious! But back to my cake, they, the cake makers, will be making sugar versions of the hubby and I as our cake toppers. I can’t wait to see it all come together!
Wednesday was probably the hubby’s favourite day as we spent the day at the venue for our meal tasting! All I can say about the food for our wedding is that it is truly out of this world! It was the best meal Petey and I have ever had. Here’s a sneak peak at the menu.
To top off the fabulous meal, was the amazing view we had from our seats. It was truly breathe taking to be by the Irish Sea.
On Thursday, I was able to get all dolled up thanks to the amazing hair appointment I had. My wedding hair was everything I had envisioned and more and I can’t wait for Peter to see the final put together look! Here’s a peak.
Friday was a bit of a mix of downtime and photographer time as Petey and I made our way to Dublin early to walk around a bit and meet up with our photographer. This man, Bob Dixon, is incredible and I cannot wait to see our pictures. We told him we didn’t want the usual posing type of photos, but rather something fun, and he couldn’t have been more thrilled. To get a better understanding of what I’m excited to see, here are some pictures we shared with Bob about of photo vision.
Finally, on Saturday, we met up with one of my bridesmaids, and the hubby’s super close friend, Lisa, to discuss everything wedding and to just catch up on things that were going in our lives.
Then Sunday we left. How is that for getting all your wedding planning done in 7 days, eh?!

As some of you know, my friend Ali and I have a radio show called, “Ali and Mati In The Morning” on RiotRadio.ca. On the show, we have a segment called “Hey Girl” where we read the Ryan Gosling “Hey Girl” things like, ‘Hey Girl, feel my sweater. That’s right, it is made out of boyfriend material’. Anyways, as look for new ones every week, I found this gem that made me die laughing. I hope you enjoy it as well!
I’m definitely writing this while I’m sitting on a plane on my way to IRELAND! I’m so freakin’ excited!!!!! I finally get to plan my wedding ceremony. The itinerary is filled with cake and food tastings, venue run-throughs, florists, and so much more. Hey, I have to keep some surprises for my guests.
For now though, I’m just relaxing on flight to Ireland after a long day at Pearson Airport and a small stopover in Philadelphia…. I may have also sung the “Fresh Prince of Bellaire” theme song almost the entire flight in excitement. I definitely think Peter will have to make another visit to the land of Philly Cheesesteak and actually tour the city instead of seeing only Terminals F and A.
As for this current flight to Dublin, I have to say, their movie offerings have been FANTASIC! The first film was Skyfall (again, I’ve been singing the theme song the whole time…. and wondering if Adele won an Oscar for it, seeing as how I’m en route, I have no idea what is happening at the Oscars). And then there is the current film offering of Hitchcock. Now, I really wanted to see this movie, but I’m not spending $5 for their special headphones, so I’m watching it and making up my own dialogue while listening to my random selection of music.
Anywho, I’ll definitely keep you posted throughout the trip and don’t forget that on March first 30 Days of Lists begins again! I’m so pumped for this. I’ll be working on my first couple of lists while in Ireland, so my Photoshop skills will be coming into good use.

Everyone loves chicken fried rice and here is my take little recipe for it. Hope you enjoy.
What you will need:
2 – boneless skinless chicken breasts cut into bite size pieces
3 – green onions chopped
2 tablespoons – minced garlic
1 cup – mixed frozen vegetables
2 tablespoons – soya sauce
Cooked Rice
How to make it:
1. In a frying pan, spray non-stick spray for 5 seconds. Then add egg whites. Stir until fully scrambled. Remove cooked egg whites from stove and place in a bowl.
2. Respray frying pan with non-stick spray for another 5 seconds. Add green onions and minced garlic to the pan. Stir for 3 minutes.
3. Add chicken to pan. Stir frequently until chicken is cooked through.
4. Add mixed frozen vegetables to chicken, green onions and minced garlic. Stir until cooked.
5. Add cooked rice and Soya sauce to the pan with chicken mixture. Stir for 5 minutes. Serve.
